This was a pop-up dinner that took place in Houston. However, the actual restaurant is in The Woodlands.

What's the Skinny?

A few weeks back I had the opportunity to do something that I’ve been meaning to do for a while now, but let the thought of driving to The Woodlands stop me. I got an opportunity to experience Hubbell & Hudson Bistro, right here in the city when they packed up their kitchen and restaurant staff and headed up interstate 45-South to do a pop-up dinner.

The eight-course dinner was hosted by Roseann Rogers and her team at John Daugherty Realtors, at a brand newly-restored Pasternak Custom Home. Before being seated I mixed and mingled in the parlor of this stunning mansion with other industry and media guests while sipping on signature cocktails.

I must say that Chef Austin Simmons along with his executive Sous Chef Lance Criswell, and Pastry Chef Katrina Autem, did an amazing job creating and executing this meal that consistently delivered well-developed flavors and textures. Course after course we were left speechless and with anxious anticipation of what was up next. 

What Did We Love?

I really could say that I loved all eight courses of the dinner!, and be happy leaving you all with that; but there were a few breakout stars that must be recognized by the “Eat’em Up Munch-Munch Committee”(yes that’s me and I occupy all the seats):

Escolar served with jalapeño marmalade, and a ponzu bouillabaisse

Poached and Tempura lobster, served with bacon uni miso sauce, and let’s not forget the charred grapefruit

Japanese A5 Wagyu beef with fresh shaved Perigord truffles, along with artichoke fennel salad, anise blossom, and a peppercorn demi-glace

So will I be driving to The Woodlands to get more? That’s a big HELL YA; and I would advise you all to do the same. These folks know how to create a complete culinary experience, which at the end of the day is one of the main reasons we go out to eat in my opinion.
