German Mosquera, the chef/owner of Roots Bistro, continues to prove that getting a nutritious fix of fruit and vegetables can be a tasty treat with the debut of Roots Juice.  Located adjacent to the popular, Green Certified bistro, just opened Roots Juice is the only made-to-order, fast casual juice bar and café of its kind in the city.  In addition to a rotating menu of juices and smoothies, Roots Juice features a variety of breakfast and lunch items with a range of vegan and gluten-free options.

“Roots Juice was a natural extension of the bistro and shares our commitment to working with the best of farm fresh ingredients that are locally sourced,” said executive chef and owner German Mosquera.  “Our goal was to create a fun and casual, coffee shop-like environment that would serve both grab and go needs and as a gathering place in the Montrose area.”

Encompassing approximately 1,100 square feet of interior space, plus a prime Lower Westheimer facing patio and herb garden shared with the bistro, Roots Juice showcases a farmhouse chic interior that celebrates sustainability with a focus on repurposed and reclaimed items, including salvaged wood tables and vintage chairs.  An entire wall has been dedicated as an interactive community corkboard.

Local health enthusiast and fellow vegan, Rebecca O’Brien, recently joined Mosquera to manage and oversee day-to-day operations at Roots Juice.  O’Brien has strong ties with the local farmers market circuit – relationships she first forged as member of the market management team for Urban Harvest.  Intimately involved in the creative process, she can often be found personally hand-picking daily ingredients.

O’Brien likes to think of Roots Juice as the “crunchy little sister” to the bistro, which lends a portion of its more expansive kitchen space with a designated area for juice and smoothie preparations.  Seasonal breakfast and lunch offerings currently include vegan zucchini muffins, a selection of gluten-free and grain-free pastries, and granola with coconut yogurt and seasonal fruit; raw “squashta” with shredded carrot, cilantro, tomato, pumpkin seeds and almond sauce; cold soba salad with cashew, sweet corn, cucumber and Korean BBQ dressing; fresh vegetable nori rolls; chevre, avocado and sprout sandwiches on house-made foccacia, plus chocolate fig mousse.

The current roster of juices features Alchemy with carrot and ginger; Green Age Dreams with spinach, celery, parsley, cilantro, lime, fennel and cucumber; Beet It with carrot, jalapeno, cucumber, celery, spinach and beet; Kale Take with kale, cucumber, spinach, pear, apple and lime; and Elixir #1 with orange, apple, ginger and cilantro.  Alternative smoothies include Up with peach, strawberry, orange, ginger, agave and maca; Kombu-cha-chawith banana, ginger, vanilla, cherry and kombucha; and OMGoji with Goji berry, strawberry, agave, coconut oil, vanilla and almond butter.
