PESKA Seafood Culture recently unveiled a new “omarkase” service that features either an either 6 or 8-course menu designed by executive chef Omar Pereney. Starting Thursday, February 18, the dinner will kick off as a weekly event held every Thursday at 7:30pm. Priced at $100 per person including wine pairings, the menu will be constantly updated to highlight different parts of the world as well as feature seasonal items.

From the citrus-dressed oyster to salty roe-smothered yellowfin to buttery sous vide salmon to the symphony of tastes, textures and flavors in a passionfruit-coconut dessert (garnished with a chocolate macaron!) unveiled during the first service, this event is pretty much guaranteed to be a hit every time.
Course 1: East coast oysters with habanera granita
Course 2: New Zealand snapper crudo
Course 3: Yellowfin tuna with roe
Course 4: Salmon mi-cuit, horseradish cream and roasted beets
Course 5: Crispy octopus, cous cous, dill and yogurt sauce
Course 6: Branzino, potatoes au gratin and wedge salad
Course 7: PESKA signature lemon olive oil sorbet
Course 8: Fruit of the passion (passionfruit and coconut panna cotta)
